  • 1 cup semi-sweet chocolate chips preferably high-quality for a glossy finish
  • 1/2 cup peanut butter natural, unsweetened preferred
  • 1 1/2 cups roasted peanuts can substitute with chopped almonds or cashews
  • 2 tbsp honey or maple syrup for a different sweetness note
  • a pinch flaky sea salt for sprinkling on top
  • 1 tsp vanilla extract to deepen flavor

Method
 

  1. Combine the chocolate chips and peanut butter in a microwave-safe bowl, then microwave in 30-second bursts, stirring each time, until smooth and glossy.
  2. Add the roasted peanuts, honey, and vanilla extract to the melted mixture. Stir until the peanuts are evenly coated and the mixture looks thick and sticky.
  3. Use a tablespoon or small cookie scoop to portion the mixture onto your prepared baking sheet lined with parchment or a silicone mat. Leave some space between each cluster for spreading.
  4. Sprinkle a tiny pinch of flaky sea salt on top of each cluster for that perfect salty contrast.
  5. Let the clusters sit at room temperature for about 15 minutes, or refrigerate for 30 minutes until they are firm and shiny.
  6. Once set, gently peel the clusters from the parchment or silicone mat. Serve immediately or store in an airtight container at room temperature or in the fridge for up to a week.

Notes

Feel free to customize by adding dried cranberries, shredded coconut, or a different nut butter for variety. Chilling the clusters helps them set faster and keeps them firm and shiny.
