Pit and chop the dates into small pieces, soaking dry ones in warm water for 10 minutes if needed, then draining thoroughly. This softens them for blending.
Break the dark chocolate into small chunks and melt it in a microwave in 20-second bursts, stirring until smooth and glossy. Let it cool slightly if it’s too hot.
In a small mixing bowl, combine the softened dates, melted chocolate, sifted cocoa powder, nut butter, vanilla extract, and a pinch of sea salt. Mix everything together thoroughly until it’s sticky, smooth, and well incorporated, about 2–3 minutes.
Taste the mixture and add a tiny bit more salt or nut butter if it feels too dry, or a splash of warm water if it’s too crumbly. The mixture should hold together when pressed.
Using a tablespoon or small scoop, portion out the mixture and roll into bite-sized balls. Place each on your parchment-lined tray, pressing gently to shape if needed.
Optionally, press a small piece of chopped nut or sprinkle a pinch of sea salt on top of each bite for added flavor and texture.
Chill the bites in the refrigerator for 30 minutes or in the freezer for 15 minutes until firm and shiny. The bites should be chewy, fudgy, and glossy when ready.
